Indian dish kheer

Khir is a sweet and flavorful dish, something between porridge and pudding. It is characterized by the use of king spices such as saffron and cardamom.

Khir is a favorite dish of Shiva, which harmonizes the energy of the Moon. It is often offered as prasad and an offering to the deity, as a spiritual and sacred substance and as a symbol of divine grace and devotion. Therefore it should be prepared with proper respect and reverence.

Ideally, one should eat food that is prepared with a certain attitude. Mahadev is believed to taste only that which is offered with love. Therefore, the process of preparation is creative and responsible at the same time. Care must be taken to ensure that everything is of the best quality and to cook with care and attention to satisfy Lord Shiva.

How to prepare kheer? It is advisable to prepare and offer this dish in the right way, with pure thoughts and intentions.

The purpose of all this is to express our gratitude and devotion to the Greatest of gods, so try to put all your love for Him in the preparation of the food, and He will accept your offering.

Ingredients :

Cow’s milk – 1 liter.
Round-grain rice – 85 g.
Maple syrup – 50 ml
Saffron – approximately 10 spears
Sea salt – a pinch
Raisins – 2 tbsp.
Nuts to taste – 2 tbsp.
Cardamom – 1 tsp.
turmeric – 1 tsp.

Wash the rice well. Pour milk into a saucepan, bring to a boil. Add the rice to the milk and cook over medium heat until it thickens, 40-50 minutes.
Add the maple syrup and ground cardamom, saffron and turmeric. Stir thoroughly.
Cook over low heat until the rice has reached the consistency of thick porridge. Stir constantly to prevent the rice from sticking.
If it gets too thick, add a little milk or water.
Sprinkle kheer with nuts.
