Ingredients:
Grated carrots – 1 tbsp.
Milk – 1,5 tbsp.
Cinnamon ground – 1/2 tsp.
Ground ginger – 1/4 tsp.
Nutmeg ground – a pinch
Sea salt – to taste
Oat flakes – 1 tbsp.
Vanilla – 1/2 tsp.
Fresh lemon juice – 1/2 tsp.
Chopped walnuts – 1/2 tbsp.
Coconut shavings – 2 tbsp.
Maple syrup – 3 tbsp.
Light raisins – 1/3 tbsp.
In a saucepan over medium heat, combine milk, cinnamon, nutmeg, ginger and salt. Add oats and shredded carrots and cook for 8-10 minutes, stirring constantly. When the mixture thickens, remove from heat. Add vanilla, raisins, walnuts (1/3 tbsp) and maple syrup. Transfer to a baking dish and place in the oven for 7-10 minutes. Transfer the finished pudding to a bowl. Drizzle with lemon juice and sprinkle with coconut shavings and walnuts.
