VEGETARIAN CABBAGE SOUP WITH BULGUR

Ingredients :

Carrots – 1 pc.
Sweet bell pepper – 1 pc.
Tomatoes – 2 pcs.
Dried celery root – a handful
Potatoes – 3-4 pcs.
Bulgur – 3 tbsp.
Fresh white cabbage – about 200 gr
Water – 1,5-2 liters – depending on the desired thickness of the soup
Vegetable oil – 2 tbsp.
Dried basil – 2 t. sp.
Oregano – 1 tsp.
Coriander ground – 1/2 t. sp.
Pepper – 5 peas
Salt – to taste
Vegetarian cabbage soup with fresh cabbage: prepare
Grate carrots on a grater. Braise it for 2 minutes on a high heat, stirring occasionally. Cut the bell bell pepper into small cubes. Shred the tomatoes. Add the bell peppers and tomatoes to the carrots, cook over high heat for 3 more minutes. Pour hot water and bring everything to the boil. Dice potatoes and add them to the pot. Add celery and spices: basil, oregano, coriander, chili pepper. Add salt to taste, so that the broth is salty enough. Close the pot with the lid and cook the soup on medium heat for 5 minutes. Then add the bulgur. Cook under the lid for another 10 minutes. While the soup is boiling, chop the cabbage in thin strips. Put it into a pan 3 minutes before the readiness of soup, stir it. Close pan and leave for 10 minutes. To serve garnish with fresh greens and sour cream.
