This holiday salad will appeal because it’s filling but not overly heavy. It’s more of a hearty dish than a dessert dish. But at the same time, the combination is very light. A little bit of this mix can be afforded without remorse on New Year’s Eve.
To prepare a delicious nutritious New Year’s salad of beets, feta, walnuts for 3-4 servings, you will need:
Fresh beets – 1.5 – 2 pieces medium;
walnut kernels – 2/3 cup;
feta – 200 grams;
Arugula and lemon – for piquant decoration.
For the beauty of serving you should find a flat or slightly deepened dish. You can also serve this mix in a deep salad bowl, but then the attractiveness of the composition will not be so noticeable to the participants of the New Year festivity.
Beets need to be peeled. To simplify this process, you can scald the root vegetable with boiling water, and then immediately dip it in cold water. The peeled fruit should be cut into medium or small bars. Put the beet on a dish. Crumble the feta on top. Nuts kernels should be slightly crushed with a press or a rolling pin. You can grind walnuts in a special mortar. The resulting crumb should be scattered on top of beets and feta. Tear the rucola into small elements and decorate the composition with this greenery. For dressing, you can use a drop of fresh lemon juice. As a decoration, place 1-2 lemon slices on the edge of the dish.

This salad is good when freshly prepared. However, it does not spoil if prepared 2 to 2.5 hours before serving. One tip: if you decide to make this salad composition in advance, leave it to wait for the holiday hour in the cold.
