ORIGINAL SALAD OF CARAMELIZED CARROTS, KIWI, STEAMED PUMPKIN AND TOPINAMBOUR

To complete the list of New Year’s salads novelties 2019, here is a recipe for making an original hearty salad of pumpkin pulp, carrots, topinambour and kiwi. This dish will simply charm the participants of the feast! It is unusual, delicious and very nutritious. You can find the components in any vegetable shop or in a supermarket. To make this salad is not as difficult as it may seem at first glance.

To prepare 3-4 servings you will need:

Topinambour fresh – 1-1.5 small tubers;
pumpkin pulp – 100 grams;
1-2 small carrots;
1 fresh ripe kiwi fruit;
honey to caramelize the carrots – 1-2 teaspoons;
Feta cheese for decoration – 100 grams.
To serve this dish, you will need a special serving ring and a flat serving plate.

Peeled flesh of topinambour and pumpkin to steam until soft (so that the strength of consistency is gone, the fibers softened). Flesh should be cooled and cut into cubes. Peel carrots, cut into large bars and caramelize. To do this, pour a couple of teaspoons of honey and 1 spoonful of water into a heatproof bowl. As the liquid mixes and boils, gently add carrots there and boil for 1-2 minutes over high heat. Once cooled, place the carrots on a paper towel and let the caramel coating “set”. Peel the kiwi and cut into medium slices. Then take a serving flat plate and a serving ring. Lay out the salad in layers: topinambour, pumpkin, kiwi. The final layer is the feta cheese. 1-2 bars of caramelized carrots will decorate this composition. All servings should be prepared in this way.

Note

This dish will need time to soak and solidify. Therefore, feel free to prepare it 1.5-2 hours before serving. Once the layers of the salad are stacked and the final chord is added in the form of decorations, the salad should be sent to the refrigerator. During the infusion, the layers will soak up the juices and the dish will be saturated with a unique flavor. This composition will help surprise guests and bring a bright note to the holiday feast!
