Ingredients :
Quinoa – 200 g (cooked in vegetable broth)
Broccoli – 300 gr (fresh or frozen)
Non-rare cheese – 1 cup (grated)
Salt and pepper
Whole-grain tortillas – 4 pcs.
Olive oil – 2 tablespoons.
Boil quinoa in vegetable broth. Chop the broccoli. Mix quinoa, broccoli and cheese in a medium sized bowl. Salt and pepper to taste. Place on half of each tortilla and then roll in half. Heat one tablespoon of oil in a frying pan. Fry 2 quesadillas until brown. Add the remaining oil and repeat with the next tortillas. Slice and serve.
