Ingredients :
Eggplant – 2 pcs.
Zucchini – 2 pcs.
Red pepper – 1 pc.
Yellow pepper – 1 pc.
Tomato – 4 pcs.
Olive oil – 4-6 tbsp.
Salt, spices – to taste
Soft goat cheese – 32 g
Salad leaves – a big bunch
Cut eggplants into small pieces. Cut zucchini into small slices. Cut peppers into thin slices. Cut the tomato into quarters.
Preheat the oven to 200 degrees. Grease a baking tray and spread a thin layer of vegetables. Sprinkle with spices and salt. Bake for 25-35 minutes until tender, then cool. Mix with greens and cheese.
