Ingredients:
80 g. spelt,
80 g. carrots,
70 g. parsnips (white root),
300g. potatoes,
220g of cauliflower,
100 g. frozen green peas,
dill,
salt,
pepper,
bay leaf,
vegetable oil.
Step 1: Soak the spelt for 1 hour, rinse. Leave overnight in a wide bowl, covering the top with another plate. After that, wash the spelt and boil it in a large amount of salted water for 30 minutes. Drain the water.
Step 2 Cut carrots and white root into julienne strips.
Step 3 Fry the carrots and parsnips in a little vegetable oil.
Step 4. Divide the cauliflower into florets. If there is time, do this in advance, leaving it for 40 minutes. This promotes the production of anti-cancer agent in the cabbage.
Step 5: Peel and cut potatoes into small cubes.
Step 6. finely chop the dill.
Step 7. boil water in a saucepan, add potatoes. After 5 minutes after boiling, add spelt and cook for another 5-7 minutes. Then put green peas in the soup. When the soup is almost ready, add the roasted potatoes, salt, spices, bay leaf and dill. Cook a few more minutes. Turn off the heat, cover the soup with a lid and leave it to infuse for a while.
