YOUNG NETTLE SOUP

Nettles. At first glance, a stinging weed that causes burning and irritation to the skin when it comes into contact. But not everyone knows how unique this plant really is. In our column, briefly, we talked about the useful properties of this herb, and how to cook delicious vegetarian nettle soups.

Today, we propose to consider a step-by-step recipe for making vegetarian soup from young nettles, which has a great taste.

And the difference between soup and soup isn’t just in the ingredients. In taste, the two dishes are also completely different, not unlike each other.

Nettles are a low-calorie plant, only 24.8 kcal.

100 grams of nettles contain:

Protein – 1.5 g;
Fats – 0.0 gr;
Carbohydrates – 5.0 gr;
The complex of vitamins A, B1, B2, PP, high content of vitamin C, as well as macro-and micronutrients, such as iron, iodine, potassium, calcium, magnesium, sodium and phosphorus.

Soup from young nettles: cooking recipe
Ingredients:

Potatoes – 200 grams;
Laurel leaf – 1 piece;
Purified water – 400 milliliters;
Carrots – 30 grams;
Butter – 40 grams;
Nettles fresh – 30 grams;
Salt – 1/2 teaspoon;
Black pepper – 1/4 teaspoon;
Home seasoning “Universal” – 1/2 teaspoon;
Avocado – 1/2 piece.

  1. Peel the potatoes from the skin, finely chop them, put them in a pot, rinse them to clean water, add water and put to boil together with a bay leaf;
  2. Carrots are peeled from the skin, cut into thin julienne and stew in butter until tender;
  3. In the potato broth add stewed carrots, salt, ground at the mill black pepper, seasoning “Universal” and continue to cook;
  4. Nettle leaves wash, finely chop and send to the pot with potatoes and carrots, cook for one minute;
  5. Avocado peel from the skin, cut into small cubes;
  6. Remove the pot with the soup from the burner, add the avocado, stir it gently and let it stay for one or two minutes.

Our delicious and healthy vegetarian young nettle soup is ready.

If desired, it can be dressed with sour cream or vegetarian mayonnaise.
