Ingredients :
Zucchini – 2 pcs.
Carrot – 1-2 pcs.
Tomato – 2 pcs.
Couscous – 1 tbsp.
Parsley – a bunch
Salt, spices – to taste
Vegetable oil
Cream sauce – to taste
Wash zucchini, cut them in half and peel their pulp. Peel and grate carrots. Cut tomatoes into pieces. Put zucchini flesh, carrots and tomatoes in a heated pan with oil, salt and season. After a while add couscous and water to swell it. Cook until soft. Finely chop the greens and add to the mixture. On a baking tray greased with oil place zucchini boats, fill them with mixture, bake at 200 degrees for about 30 minutes by taste. Serve with fresh vegetables, greens and homemade sauce.
