Pumpkin is called the queen of autumn for a reason. It’s so bright! So beautiful! And you can’t even count the recipes for it. Another great advantage of pumpkin is that it stores well. And if you cut a beauty, and even a big one, for several kilos, you can prepare a huge number of dishes with it. A pumpkin week can easily turn out. Salads, soups, casseroles and stew. Today we are going to try pumpkin for dessert and make pumpkin cookies quickly and deliciously!
Pumpkin cookies: ingredients
Whole wheat flour – 2.5 cups (320 g).
Baking soda – ¼ tsp.
Sea salt – ¼ tsp.
Grated ginger – 2 tsp.
Ground nutmeg – ½ tsp.
Ground cinnamon – 1 tsp.
Butter – 100 gr.
Baked pumpkin puree – 250g.
Sugar – 200 gr.
Pumpkin seeds – 25 gr.
Recipe for pumpkin cookies
Pumpkin pre-bake, you can also boil it and mix in a blender with butter, grated ginger and sugar – we get the most beautiful and delicious puree. Separately, in a bowl mix all the dry ingredients. Then we combine pumpkin puree with flour mixture. Then we knead the dough and wrap it in clingfilm and put in the fridge for half an hour – let it all lie there for a while and make friends.
After 30 minutes we take out the dough from the fridge and roll it out into a sausage, which we cut into equal parts and roll out dough balls. Place the pieces on a baking sheet dusted with flour, press pumpkin seeds on top of our future cookies and send them to a preheated oven at 180 degrees for 30 minutes.
