SALAD WITH GOAT CHEESE

Ingredients :

Goat cheese – 200 g
Cherry tomatoes – 5 pcs.
Ruccola – 1 bundle
Chicory – 1 pc.
Beet leaves – 1 bundle
Bread crumbs – 1 package
Pine nuts – 30 g
Honey – 1 tsp.
Olive oil – 3 tbsp.
Balsamic vinegar – 2 tbsp.
Croutons of bread – 4 units.

Cut the whole wheat bread into 4 thin slices, drizzle with olive oil and bake until brown. Form the goat cheese into cutlets, roll them in breadcrumbs and fry for 2-3 minutes on each side until golden brown. To make the dressing, mix the olive oil, honey and balsamic vinegar into a smooth mixture. In a salad bowl, mix the arugula, beet leaves, chopped chicory, tomatoes and pine nuts. When serving, place croutons, cheese, lettuce mixture on plate and drizzle with dressing.
