Ingredients :
Pumpkin - 700 g
Durum wheat flour - 250 g
Salt
Flour for kneading
Ghee or butter - 100g
Basil
Preheat oven to 200°C. Place the pumpkin on a baking tray and bake in the preheated oven for 1 hour. Once one side is dark golden, turn the pumpkin over.
Cool, peel and grate or mash.
Sift a heap of flour onto a work surface, make a well in the center, add the pumpkin and a pinch of salt, and knead the dough.
Knead thoroughly for about 20 minutes, adding flour as needed. The dough should be soft and elastic, slightly moist inside.
Form the dough into a 10 cm long cylinder. Cut off a small piece of dough, roll it into a sausage about 1.5 cm in diameter and cut it into 1 cm long pieces. Roll each piece into a ball, place it on a gnocchi board and gently press down. If you do not have a special board, use a fine grater.
Spread the prepared gnocchi on a surface sprinkled with flour, and then boil them in boiling salted water for 7 minutes.
Melt the butter in a frying pan. Drain the ready gnocchi in a colander, then add to the pan with the butter and cook for 2 minutes. Then place on plates, garnish with basil leaves.
