VEGETARIAN MIMOSA

Ingredients :

Paneer – 300-350 gr (adygeyan or tofu)
Potatoes – 300 g
Carrots – 2 pcs.
Celery – 2 stalks
Nori sheets – 5-6 sheets
Black salt, black pepper (to taste)
Eggless mayonnaise (lean) or vegetarian (homemade) – to taste

Boil potatoes and carrots until tender. When cool, peel and grate them. Grate celery. Tear the sheets of nori finely and pour a little hot water, then whip in a blender until smooth. Grate paneer or paneer cheese on a coarse grater. Mix cheese, seaweed, mayonnaise and black salt in a bowl. “Sprinkle of paneer” – not a large piece of paneer grate on a fine grater, add a little turmeric and black salt, mix. Lay the salad in layers: paneer with nori – mayonnaise – carrots – mayonnaise – celery – potatoes – mayonnaise – a sprinkle of paneer. Garnish with greens.
