SPINACH BRUSCHETTA

Ingredients :

Flourless bread.
Vegetable oil – 1 1/2 tablespoons oil
Spinach – 1 cup
Red bell bell pepper – 1 pc.
Tomato – 1 pc.
Black pepper – to taste
Italian seasoning – to taste
Tomato sauce – 1 tbsp.
Cream – 1 tbsp.
Grated cheese – 1 cup
Salt – to taste

Cut the bread about one inch thick, brush with butter and bake for 6-10 minutes in a preheated oven at 180 degrees C. Roughly chop the spinach and blanch (turn it to boiling water). Meanwhile, prepare the red pepper sauce. In a saucepan, mix chopped bell peppers, salt, tomato sauce and Italian seasoning with oil and stew until tender. Add the cream, bring to the boil, but do not boil, remove from the heat and cool.

Spread the blanched spinach on toasted bread, top with the finely chopped tomatoes, add the cheese and bake again for 5 minutes in a preheated oven at 180°C. Then pour the sauce over it just before serving.
