SPELT PORRIDGE WITH VEGETABLES

Ingredients for 3 servings:

160 g. dried spelt
500 ml of water to soak spelt
700 ml of water for stewing
80 g cauliflower
½ medium bell bell pepper
½ medium carrot
1 large tomato
3 tbsp vegetable oil
Paprika, turmeric, coriander, zira, black pepper, salt (to taste).

Step 1: Thoroughly wash the spelt and pour clean water over it. Leave it for the night or at least for 4 hours.
Step 2 Cut carrots and peppers into small cubes, cauliflower into florets. The tomato can be cut into larger cubes.
Step 3: Heat oil in a large saucepan or large frying pan with thick sides and put carrots and cauliflower in it first. After 10 minutes add peppers. Rinse soaked spelt and also put it in the pan. Add 700 ml. water and stew for about 30 minutes over medium heat. In the beginning, the vegetables can not be fried, and simmer with a little water.
Step 4. After 30 minutes, add chopped tomato and spices to the future spelt porridge. Thoroughly stir and stew for another 10 minutes.
Step 5. Remove the pan from the heat and let the porridge rest for 5 minutes. After that we can add some more oil and serve.
