We offer you to cook vegetarian hodgepodge. What is, in general, solyanka, or, as this dish used to be called, selyanka. It’s a thick, spicy soup, something in between the first and second course.
The taste of solyanka is sour-salty-spicy, made up of its main components: pickled or pickled cucumbers, optionally, it can be mushrooms or sauerkraut, olives, capers, lemon.
Traditional hodgepodge of spices, most often dill, parsley, onion, and garlic. The version that we propose for you to cook, in my opinion, is not inferior to traditional hodgepodge, but has many advantages compared to it.
It is definitely less greasy!
It does not contain tamasic products!
And yet delight us with a familiar taste!
So, let’s cook assembled vegetarian hodgepodge.
To make our Vegetarian Salad we’ll need the following products:
200 grams of smoked cheese;
3-4 potatoes;
1-2 carrots;
2 stalks of celery;
200-300 grams of cauliflower;
1 large tomato;
Pickled or pickled cucumbers;
2 liters of water;
2 tbsp. melted butter;
0.5 tsp. mustard seeds;
0.5 tsp. ground fenugreek;
1 tsp. smoked paprika;
1 tsp. sea salt;
Greens, lemon, olives.
Let’s start cooking a vegetarian hodgepodge. We cut all the products into cubes, put the water. This, by the way, can also be vegetable broth, just the day before I boiled potatoes for stuffing dumplings, that’s what I took for the soup. First, we throw the sliced potatoes into the hot water to boil, and after a few minutes, the cauliflower.
We heat melted butter in a frying pan, throw mustard seeds in the heated butter. As it starts to shoot, add carrots, fry a couple of minutes, then put chopped cucumbers there – two more minutes, then celery and tomato, let’s stew a little. We finish it all up with some fenugreek and paprika.
Send the contents of the pan to the pot, where our potatoes and cabbage are almost ready. Stir and add olives, cheese, herbs and salt. Two more minutes on the heat, and leave to infuse for at least half an hour. Our Vegetarian Hodgepodge is ready. This is just one of its variations. You can, of course, experiment based on it.
You can take beans instead of potatoes, you can add mushrooms or sauerkraut, and if you like, you can add vegetarian sausages, that’s what this “hodgepodge” is.
