VEGETARIAN KULEBYAKA

Ingredients :

Puff pastry, shortbread or unleavened yeast-free dough
Boiled chickpeas (or lentils) – 1, 5 tbsp.
Cooked rice – 1 tbsp.
Carrots – 1 pc.
Sweet bell pepper – 1-2 units.
Butter – 2 tablespoons.
Bread crumbs – 1-1,5 t.
Salt, cumin, turmeric, dried herbs – to taste

Chop peppers finely. Grate carrots. Lightly poach the vegetables in a pan or steamer. Chop chickpeas or lentils in a food processor. Add to the rice. Add vegetables, salt, spices and bread crumbs. Mix well. You can add any cooked vegetables, nuts and herbs. Stir and form the mass into a loaf shape. Roll out the dough and put it on a baking tray lined with parchment. Place the filling in the center of the dough. Cut the edges of the dough into wide strips and wrap them around the filling, weaving them together. Brush the surface with vegetable oil. Bake at 180°C for 30-40 minutes.
