VEGETARIAN OLIVIER

For many, Olivier salad is a favorite dish, but how do you make it vegetarian? It’s not just possible, it’s readily available, tasty and quick to prepare. All the necessary products are available in the grocery stores, so all you need is a good mood and the desire to cook.

So, today we’re going to make a vegetarian Olivier salad together and add the definition of “savory” to its name. Let’s introduce some “zest” to this usual salad, which will give it an unusual, completely new taste.

The role of “zest” will be performed by two ingredients – arugula and cilantro.

Arugula is a type of cabbage, which has a special, spicy taste and smell.

This plant is very useful and low in calories – 25 kcal.

A hundred grams of arugula contains:

Protein – 0.5 g;
Fats – 0,6 gr;
Carbohydrates – 2.0 gr;
A full complex of B vitamins, vitamins A, E, K, PP, C, as well as important macro-and micronutrients such as iron, iodine, potassium, calcium, magnesium, manganese, copper, sodium, selenium, phosphorus.

Cilantro is a well-known plant, similar in appearance to the usual parsley. It has not only a specific spicy taste, but also prolongs human life, thanks to its unique composition of vitamins and macro-and micronutrients. In combination with other spicy herbs, cilantro gives a special, incomparable pleasant aroma.

This is a healthy and low-calorie plant – 23 kcal.

100 grams of cilantro contains:

Protein – 2.1 g;
Fats – 0,5 gr;
Carbohydrates – 3.6 gr;
A full complex of B vitamins, vitamins A, E, PP, C, as well as macro-and micronutrients necessary for humans, such as beta-carotene, iron, potassium, calcium, magnesium, manganese, copper, sodium, selenium, phosphorus and zinc.

Vegetarian Olivier: list of ingredients
Ruccola – 3 sprigs;
Cilantro live (not dried) – 2 sprigs;
Potatoes (large) – 1 piece;
Carrots (large) – 1 piece;
Avocado – 1 piece;
Fresh cucumber (medium) – 1 piece;
Canned peas – 4 tablespoons.
Vegetarian mayonnaise – 4 tablespoons;

How to cook vegetarian Olivier by points
Wash all the vegetables and greens thoroughly.
Boil the potatoes and carrots in their skins until soft.
Potatoes, carrots, avocado, peel, all vegetables finely chop and put in a salad bowl, add there canned peas.
Finely chop the greens and send them to the vegetables.
Dress with homemade mayonnaise and decorate with greens.
