VEGETARIAN CAESAR SALAD

Vegetarian “Caesar”: ingredients
Aisberg or savoy cabbage – 200 gr
Cherry tomatoes – 6 pcs.
Chickpeas – 100 g
Curry – 1/4 tsp.
Croutons – handful (optional)
Freshly ground black pepper, salt – to taste
Ghee oil – 1 tbsp.

Sauce:

Homemade yogurt – 1 tbsp.
Mustard – 1-2 t. sp.
Salt, pepper – to taste
Lemon juice – 1 tbsp.
Vegetarian “Caesar”: cooking
Chickpeas pre-soak for 24 hours, rinse, boil in water for an hour. Mix oil, curry, salt and chickpeas in a bowl, stir together, put them on a baking tray and bake for 15 minutes at 180 degrees.

Prepare the sauce: pour into the bowl of a blender yogurt, mustard, pepper and salt, lemon juice – blend until smooth.

Rinse the cabbage well, cut the leaves into medium sized pieces. Cherry tomatoes cut in halves. Mix the leaves with the dressing, lay the chickpeas on top of the lettuce, season with black pepper.
