Today, we’re offering a step-by-step recipe for vegan cupcakes, easy and quick to make. But the beauty is also that they are sugar-free, without honey. And the nice sweetness of these products is given by dates.

Beautifully shaped, pleasing to the taste, they almost no one will leave indifferent.

The base of our pastry masterpiece is cottage cheese, dates and cinnamon.

Cottage cheese is a sour milk protein product that is good for the human body. Its caloric value is 156 kcal.

In 100 grams of cottage cheese contains:

Protein – 20.0 g;
Fats – 9 mg;
Carbohydrates – 2 mg.
As well as essential vitamins A, B1, B2, PP, with a large content of vitamin C, as well as elements essential for the body, such as iron, potassium, calcium, magnesium, sodium and phosphorus.

Dates – due to the high content of glucose, sucrose and fructose, dates are a high-calorie product – 292 kcal.

100 grams of dates contain:

Protein – 2.5 g;
Fats – 0,5 mg;
Carbohydrates – 69.2 mg.
As well as essential vitamins B1, B2, B5, B6, E, PP, C, as well as essential elements for the body such as iron, potassium, calcium, magnesium, sodium, phosphorus.

Cinnamon is undeniable in its benefits, it contains a vast complex of vitamins and almost all necessary macro-and micronutrients, useful for humans. Its caloric value is quite high – 247 kcal.

In 100 grams of cinnamon contains:

Protein – 4.0 g;
Fats – 1,2 mg;
Carbohydrates – 27,5 mg.
As well as a full complex of B vitamins and essential vitamins A, beta-carotene, PP, C and essential for the body micro and macronutrients – iron, potassium, calcium, magnesium, manganese, copper, sodium, selenium, phosphorus.

Vegetarian cake: necessary ingredients
Cottage cheese (0%) – 150 grams;
Baking soda – 1/2 teaspoon;
Butter – 60 grams;
Dates – 100 grams;
Wheat flour – 150 grams;
Cinnamon – 1 teaspoon.

  1. Dates are washed with water, let drain, remove the bone and finely chop;
  2. In the cottage cheese add baking soda, white vinegar, and stir thoroughly;
  3. Add butter, dates, and flour to the cottage cheese and knead the dough until smooth;
  4. On a glass chopping board, dust the glass with flour and roll out a sheet of dough with a diameter of 20 x 30 cm, sprinkle the surface with cinnamon and roll up the dough;
  5. The edges, as well as the entire length of the roll, gently pinch, the resulting sausage gently roll on a cutting board.
  6. Cut into six pieces, pinching the edge on one side. The second part of the cut is slightly spread with a knife blade, like the petals of a rose, and put the pinched side on the baking tray;

Bake in the oven at 200 degrees for about 20 minutes. Baking times are approximate, as each manufacturer has different temperatures.
