Ingredients :
Sauce:
Chopped apricots – 1 tbsp.
The zest of one orange.
Boiling water – 2/3 tbsp.
Porridge:
Milk – 1-1/2 cups.
A pinch of salt
Maple syrup – 1 tbsp.
Polenta (corn grits) – 1/2 tbsp.
Vanilla extract – 1/2 tsp.
Put chopped apricots in a bowl, add zest and pour boiling water. Let stand for 5 minutes. Then pour everything into a blender and chop. In a saucepan, mix the milk, salt and maple syrup. Bring it to the boil. Then turn down the heat and stir in the polenta. Cook for about 5 minutes, stirring all the time. Remove from the stove and add the vanilla. Spread in bowls. Serve with apricot sauce and toasted chopped pistachios. Optionally sprinkle with cinnamon, if desired.
