VEGETARIAN PEA SOUP

Vegetarian Pea Soup: ingredients
Peas – 300 gr
Carrot – 1 pc.
Parsley stalks
Tomatoes – 3 pcs.
Melted butter – 1 tbsp.
Greens
Salt, pepper, bay-leaf

Boil the peas with bay leaf in plenty of water for an hour. Wash and peel carrots, grate them. Thick stalks of parsley (you can other greens) finely chop. In a pan, braise carrots and chopped stalks in melted butter. When the peas are ready, salt and pepper them, then shred them with an immersion blender, add the carrots. Blanch (if desired) the tomatoes and chop. When serving, add finely chopped tomatoes and herbs to the plate.
