SWEDISH RICE PORRIDGE WITH BAKED PEARS

Ingredients :

Rice – 250 ml
Water – 500 ml
Milk – 750 ml
Cinnamon – 1 stick
Lingonberry (or any other berries) – 200 ml
Pear – 2 pcs.
Tahini (or nut paste) – 2 tsp.
A pinch of ground cinnamon

Add the rice and water to a large saucepan and bring to a boil. Reduce to a low flame and simmer for 10 minutes under a lid. Add the milk and cinnamon and cook for another 30-40 minutes, without stirring, until the rice is soft and tender. Preheat the oven to 200 degrees. Cut the pear in half and cut out the seed part. Line a baking tray with parchment paper, place the pears and brush with ½ teaspoon tahini or paste and sprinkle with cinnamon. Bake for about 40 minutes, until the pears are browned and softened. Serve the porridge hot or chilled with the berries, adding the pear and some more cinnamon or milk. When the porridge cools, it becomes less soft, which is ideal for serving as a dessert.
