GINGER COOKIE

Ingredients :

Flour – 400 g
Honey – 165 g
Butter – 150 gr
Ginger – 1,5 tsp.
Cinnamon – 1 tsp.
Cardamom – 1 tsp.
Soda – 2 tsp.

Over medium heat, melt the honey, add the spices, stir. Then turn off the heat, add the baking soda (it is extinguished by the honey), the mass in the pan will begin to increase and rise. To stop this process, add soft butter and mix well. All the mass will immediately settle, pour it into a bowl and gradually add flour, knead a soft elastic dough.Roll out the dough to 3-4 mm and use molds to make cookies. Bake for 10 minutes at 180 degrees Celsius. The cookies will get bigger, so do not put them too close together on a baking tray.
