Ingredients:
Red lentils – 1 tbsp.
Carrots – 2 small pieces. (can be replaced with yams)
Diced tomatoes – 1 jar or 3-4 fresh ones
Turmeric, paprika, nutmeg – 1 tsp.
Salt, pepper
Parsley, coriander – 1 bunch
Melted butter – 2 tbsp.
Heat oil right in the pan. Add diced tomatoes and spices. Stew a little. Add lentils and stir in 2 cups of water. Cover with a lid and bring to a boil. Then turn down the heat and cook for about 20 minutes until the lentils are ready.
In the meantime, prepare noodles of carrots (or yams). Peel carrots. With a coarse grater for Korean carrots make noodles.
When lentils become soft, add carrot noodles, finely chopped herbs and salt to the pot. Turn off the heat and stir gently. The noodles should not boil.
Serve with fresh herbs and black pepper.
