QUINOA AND ZUCCHINI

Ingredients :

Zucchini – 400 g
A few sprigs of thyme
Quinoa – 200 gr
A bunch of parsley
Lemon juice
Pine nuts – 30 g
Salt and freshly ground pepper
Butter

Cut zucchini into 4-5 mm thick slices. Heat a large frying pan over medium heat, add butter, zucchini, thyme, salt and pepper. Cook for 10 to 15 minutes, stirring occasionally, until the vegetables are soft.

Rinse quinoa under cold water, add to a saucepan with water at a 1:2 ratio (quinoa:water) and season with salt. Bring to the boil, then reduce the heat and simmer on low heat for 12 minutes until the quinoa is soft. Drain in a colander. Stir in the quinoa and zucchini. Stir in parsley, lemon juice, salt and pepper. Portion and sprinkle with pine nuts.
