Ingredients:
Flour – 125 g
Butter – 70 g
Hard cheese – 100 gr (without rennet)
Water – 1 tbsp.
Sift the flour. Melt the softened butter with a fork and add to the flour. Grate cheese on a fine grater. Add the cheese and water to the butter and flour and knead the dough, then leave it to rest for about 10 minutes. Roll out the dough about one centimeter thick (no thicker) and cut out cookies with a mold. Bake at 180 degrees for about ten minutes.
You can experiment with these cookies. If the cheese does not have a bright taste, you can add salt, herbs (for example: rosemary, mint or basil), ginger or coriander to taste.
