PKHALI IS A DELICIOUS VEGETARIAN GEORGIAN DISH

My girlfriend and a real Georgian taught me this dish. Thanks to her I once learned some recipes of Georgian cuisine. Pkhali, or Mkhali, as I like to call it, is one of the simplest recipes and it is also absolutely vegetarian. It is a very popular and inexpensive dish in Georgia. You may try it in your kitchen too. It is based on different vegetables, herbs or legumes that are slightly heated, blanched, stewed or boiled, and sometimes fresh. This mass is chopped and dressed with nut sauce and spices. The dish plays with new flavors and can diversify your vegetarian table.

Our variant will be from cabbage, the usual cabbage. By the way, not everyone guessed this main ingredient behind the bright flavor of greens and spices. I removed the onion and garlic from the recipe.

So, the composition of products is as follows:

Cabbage – 1 kg.
Walnuts – 200 gr.
The seeds of half a pomegranate.
Asafetida – 1 tsp.
Salt – to taste.
Suneli herbs – 1 tsp.
Suneli (fenugreek) – 1 tsp.
Black pepper – to taste, you can spicy red pepper if you like it hotter.
Grape or apple vinegar – 2 tbsp.
Cilantro – a bunch.

Kilogram cauliflower cut into large pieces and boil for ten minutes in salt water. Slightly cool, squeeze out excess moisture and finely chop. I chop in a food processor, but you can pass it through a coarse grinder, also chop walnuts and coriander. Add the rest of the ingredients and mix well. The dish is ready. You can make it into balls or serve it in a salad bowl or a flat salad bowl. Once you’ve tried it, you may want to make spinach or eggplant mhali. Enjoy your creativity!
