At the festive table we want not only to taste the delicacies, but also to feel nourished! After all, dancing, laughter and fun require great expenditure of energy. That’s why the salad with chickpeas and vegetables will come by the way to the New Year’s table. Despite the substantial content, this salad can be considered quite light and healthy. It will not break the festive intake of such food habitual healthy background in the body, but only give strength and create the right gastronomic mood.
For 3-4 servings of the salad you will need:
chickpeas – ¾ cup;
red or white cabbage – 150 grams;
arugula – to taste;
Cherry tomatoes – 4 medium sized pieces;
½ medium bell bell pepper;
1-2 drops of lemon or lime juice for dressing.
Serve the dish in a deep salad bowl.
To prepare this dish the chickpeas should be soaked for 8-10 hours. For this purpose, the peas are washed with water and poured with clean, cool water so that the liquid covers them. Thus, the chickpeas should infuse to become soft and edible. After the allotted time for cooking beans, you need to wash the vegetables and cut them into medium sized pieces. Rucola is washed and torn. Shred the cabbage (size at your discretion). The cabbage should not stand out from the overall composition, so we recommend cutting it in medium sized pieces. All the ingredients of the salad thoroughly mix in a dish to serve. The final chord is the dressing in the form of a drop of fresh lime or lemon juice. Decorate the composition with arugula leaves.

The dish is difficult because the chickpeas need to be soaked beforehand. Otherwise, the preparation of this salad is no different from the usual cutting of vegetable mix. It is important that the tomatoes and cabbage do not give excessive juice. Therefore, you should not cut the other components of the salad too early. It’s enough to start cooking 1 hour before serving the dish on the festive table.
