Ingredients :
Corn tortillas - 8 pieces.
Pumpkin - 1 piece small
Zucchini - 2 pcs.
Sweet bell pepper - 1 pc.
Boiled beans - 1 cup
Olive oil - 2 tbsp.
Zira - 1 tsp.
Chili powder - 1 tsp.
Oregano - 2 tsp.
Salt - 1 tsp.
For the sauce
Sour cream - 1/2 tbsp.
Hot paprika - 1 tbsp. small tinned pepper
Lime juice - 1 tbsp.
Salt - to taste
First of all, prepare the sauce: thinly slice the pepper, mix with the sour cream, juice and salt and leave to infuse. Preheat the oven to 220 C. Put coarsely chopped vegetables and beans on a baking tray, pour oil and sprinkle with spices, stir and bake until soft - 25-30 minutes.
Brush the tortillas on both sides with olive oil, fry in a pan for 2 minutes on each side and spread out on a paper towel. Grease the tostadas with the sauce and arrange the roasted vegetables. Add avocado or cheese, if desired.
