Ingredients :
Chickpea flour – 2 tbsp (200 g)
Coarse wheat flour – 2 tablespoons (200 gr)
Salt – 1-1,5 tsp.
Ground black pepper – 1/2 tsp.
Cumin – 1/2 tsp.
Cilantro or spinach – a bunch
Ghee – 1 tbsp.
Warm water – 2/3 tbsp.
Mix chickpea flour, salt, spices and herbs in a large bowl with oil. In another bowl, stirring, gradually add warm water to the wheat flour. After combining the two parts, knead the dough until it is homogeneous and elastic. Cover with a damp cloth and leave for 30 minutes. Then put a heavy skillet over medium heat and divide the dough into 12 pieces. Roll each piece into a flatbread, brush with butter, fold and roll again, and then again. When the pan is hot, place the roti on it and fry each side for 2-3 minutes. Serve hot.
