HUMMUS TARTLETS

Ingredients :

Wholemeal flour - 110 g
Extra Grain Flour - 80 gr
Ice water - 70 ml
Butter - 40 ml
Salt - 1/3 tsp.
Chickpea hummus - 250 g
Hard cheese - 50 gr
Cherry tomatoes - 5 pcs.

Mix two kinds of flour. In a separate bowl, whisk ice water with salt and oil. It will be a non-stable emulsion. Use it right away. Pour the emulsion into the flour. Knead the dough. Put the dough into a bowl, cover with a lid (or wrap it in cling film) and leave to rest for 20 minutes. Then roll out the dough thinly. It is very elastic and does not stick to the table, so do not need to dust the table with flour. Roll out the dough to a thickness of about 2,5-3 mm.

Use a cooking ring or a regular glass to cut out circles from the dough. Remove excess dough, roll out again and cut out circles. Now roll out each circle of dough thinner again. Place the circles in the molds. Bake the tartlets at 180°C for 10 minutes. Take out of the oven, fill each tartlet with hummus, sprinkle with grated cheese and decorate with a slice of tomato. Place in the oven for another 10 minutes to melt the cheese. Allow the tartlets to cool completely, only then remove from the molds.
